Cold Smoked Oxtail $15
This culinary creation is a harmonious blend of the saccharine hints of Korean gastronomy with the audacious zest of Texan barbecue. Adorned with a rub that boasts the sweetness of brown sugar, the depth of coffee, the luxury of vanilla, and the contrasting kick of black sea salt and chili powder, the dish undergoes a 15-hour cold smoke, infusing it with an intricate smokiness. It’s then crisped with a sear and lavished with a homemade Korean BBQ sauce. This is beautifully paired with a creamy duo of plantain and green onion puree, whispering notes of cinnamon, and a side of sharp watermelon radish kimchi slaw that provides a vibrant, tangy counterbalance.
